This recipe calls for some trusty Embasa Chipotle Peppers in Adobo Sauce, which are on special at Aztec Mexican Products and Liquor for the month of May.

What exactly do you find in this tin of Mexican goodness? Hot and smoky chipotle peppers, infused in a smoky adobo sauce. These rich and mighty peppers are guaranteed to add a depth of flavour to any Mexican dish – your guests will be talking about it long after the dinner party!

Chipotle Burgers with Creamy Avocado Sauce

Servings: 4

Ingredients

500g Beef Mince

2 Embasa Chipotle Peppers in Adobo Sauce, minced with stems and seeds removed

1 tablespoon of Adobo Sauce from the tin

2-3 tablespoons of very finely chopped onion

1 clove of garlic, minced

1 teaspoon salt

Freshly cracked black pepper

4-6 cheese slices

4-6 hamburger buns

1 tomato, sliced

Lettuce

For the Avocado Sauce

1 avocado

¼ cup of plain Greek yoghurt

¼ jalapeno pepper

2 garlic cloves

15-20 sprigs of Cilantro

1 lime

2 tablespoons olive oil

¼ teaspoon salt

Freshly cracked black pepper

Splash of water

1 tablespoon mayonnaise or cream (optional)

Instructions

1. Preheat oven to 220°C (or 200°C fan-forced)

2. Combine the beef mince, Chipotle Peppers, Adobo Sauce, onion, garlic, salt and pepper and mix well.

3. Form into 4 patties (or 6 smaller patties)

4. Sauté the patties on a frypan, on medium heat, for 2-3 minutes each side. Transfer to an oven tray and cook for 4-6 minutes in the oven, topping the patties with cheese slices for the last minute or two.

5. You can also add the burgers to the oven in the last 1-2 minutes of cooking time.

6. For the creamy avocado sauce, add all ingredients to a food processor or blender and blend till combined and mostly smooth.

7. Assemble the burgers and coat the bun with the creamy avocado sauce, adding sliced tomato and lettuce.
